Haven’t really been blogging much lately, found out last week my mum has breast cancer. I’ve been really busy with work, uni and family so fitness isn’t my number one priority right now. Hopefully I will get back on track once her operation is over and she is in the clear. Hope you all are getting closer to reaching your goals and staying positive!

Scrambled tofu

So I have been meaning to make this for a while. Got the recipe from “Appetite for Reduction” by Isa Chandra Moskowitz.

1 teaspoon of olive oil
1 onion diced
3 garlic cloves minced
1 block of firm tofu
3 teaspoons curry powder
1 teaspoon cumin
Squeeze of lemon juice
Salt and pepper
Handful of arugula
(I added half a zucchini and half a capsicum both diced)

Sauté the onions and garlic in the oil until the onions are translucent. Crumble the tofu into the pan and cook for 10 mins (also add zucchini and capsicum now). Mix in curry powder, cumin and salt and pepper. Add some water if it’s too dry. Now add arugula and cook for a further 5 mins. Add more curry powder if needed. Enjoy!

Dream shoes

So I decided my running shoes are looking pretty old and worn out. I think I bought them in 2008? Kind of embarrassing, I have some cheap pairs but they aren’t very comfortable. So when I reach my next goal weight (which is soooo close) I am buying myself a pair of these babies. If I buy them online they are about $115 which is way way way over my budget (as a poor student) but I know they will make me want to work out more.

Proud

I was a high school drop out. I quit high school at 16 and never in my life thought about a “real” career or taking anything seriously. Looking back it’s an odd feeling to see how much I have grown as a person. I am now about to start my second year of university in a double degree. I own my own car, pay rent and I work hard in my holidays to save up so I can afford to study the rest of the year. I am really proud of myself. Although I am now 22 and I am going to be 26 by the time I finish studying, I have pushed myself harder then I ever thought I could to have the life I want to live. This gives me hope for my weight, my PCOS and my general health. I will be happy, fit and ready for whatever life throws at me.

So I’ve been away for the weekend staying at my sisters place. My sister is so lovely she even cooked low carb for me because she knew I am trying to change my eating habits. So nice to have support from your family! I have to admit though I ate way too many sweets/sugary foods on the train ride there and back.

On Friday night however my family and my uncles family went to the local Italian restaurant. Everyone ordered pizza and creamy pasta and I ordered a salad, hurray for will power.

Today is Sunday (weigh day!) and I’m down another kilo :) :) 64.7kg (142 lb) which means I’ve lost more then 5kg (11 lb) since January 1st this year !!

Breakfast

Scrambled eggs (organic free range) with garlic and parsley

Lunch

Grilled chicken salad with mango 

Coffee (skim milk one sugar)

Dinner

Salad (Lettuce, snow pea and capsicum w/ balsamic)

Snacks

Dark chocolate (40grams)

5 Prunes 

Packet of mentos

Yogurt with honey and cinnamon
